Care : To sharpen the knife, a few back-and-forth strokes with a sharpening steel will straighten the edge and restore a good cutting edge. For a more thorough sharpening, you can use a whetstone, whilst maintaining a constant angle of between 20° and 30°. To restore the wood’s natural lustre, you can apply vegetable oil – such as linseed oil, sweet almond oil or grapeseed oil – once or twice a year. Do not immerse the handle in water to ensure the wood retains its lustre.
